The Story Behind Our Croffles

Every great dessert has a story.

Ours didn't begin in a kitchen.

It began on a quiet street in Penang.

Before I tell you our story, let me answer the question we hear almost every day at Secret Basement Gelato.

"What's a croffle?"

A croffle is exactly what its name suggests—a croissant transformed into a waffle. Instead of being baked in a traditional oven, the croissant is pressed inside a hot waffle iron until the outside becomes beautifully golden and caramelised, while the inside remains light, buttery and flaky. It combines the delicate layers of a croissant with the crisp texture of a waffle, creating a dessert that's unlike either one on its own.

Once you've tried one, you'll understand why croffles have become so popular around the world.

My own fascination with croffles began while wandering through the old streets of Penang. I came across a small roadside stall where a lady was making them. I stood there watching her coat buttery croissants with a light layer of brown sugar before pressing them into a waffle iron. The aroma of caramelised butter and sugar filled the air, and I was completely captivated.

I planned to return after dinner to finally try one for myself.

But when I got back, the stall had already closed.

It sounds like such a small moment, yet it stayed with me. I couldn't stop thinking about it. The idea of transforming a croissant into a waffle fascinated me. Then another thought entered my mind.

What if that warm, crispy croffle was paired with exceptional ice cream?

The contrast of warm and cold, crispy and creamy felt like the perfect dessert.

That simple thought became an obsession.

I've realised something about myself over the years. When an idea enters my mind, it doesn't simply stay there. It becomes an obsession.

I keep refining it.

I keep tasting it.

I keep changing it.

I keep starting over until it reaches the standard I have in my mind.

If I don't absolutely love it, it never goes onto our menu.

I don't believe in serving something just because it's trendy or popular. Every product has to be something that I genuinely believe people will enjoy. It has to be something that makes someone smile from the very first bite.

That's the philosophy behind Secret Basement Gelato.

When it came to creating our croffles, I knew I couldn't settle for ordinary. I searched for the right croissant with beautiful buttery layers that would crisp up perfectly while remaining soft and flaky inside. After a long search, I found a supplier trusted by Michelin-starred restaurants. I knew that if I wanted to create an unforgettable dessert, I had to begin with exceptional ingredients.

There was another challenge waiting for me.

Long before I decided to introduce croffles, I had invested in a beautiful Belgian cast-iron waffle maker. I imagined making incredible waffles with it, but every attempt ended in frustration. The waffles stuck to the plates, tore apart, and after every batch I found myself scrubbing the cast iron clean.

For almost three months, I wondered whether I had made an expensive mistake.

Then one day, I placed a croissant into the waffle maker instead.

Everything changed.

As the croissant cooked, the butter slowly melted into the cast iron, naturally coating the plates while caramelising the sugar on the surface.

When I lifted the lid, I couldn't believe what I was seeing.

It was beautifully golden with a glossy buttery sheen.

The outside was perfectly crisp.

The inside remained light, airy and flaky.

It wasn't simply what I had imagined.

It was even better.

At that moment, I realised that the waffle maker hadn't been a mistake at all.

It had simply been waiting for the right purpose.

Today, every Secret Basement Croffle is freshly pressed to order and served with our signature vanilla soft serve, made entirely in-house using premium French milk and cream. We finish it with our homemade chocolate sauce and a light dusting of icing sugar.

Every ingredient has been chosen with care because every detail matters.

One of my favourite moments happens before anyone even takes their first bite.

Almost every customer does exactly the same thing.

They stop.

They smile.

They take out their phone.

Before the first spoonful, they photograph it or record a short video.

That was always part of my vision.

I wanted every dessert leaving Secret Basement Gelato to be something people would instinctively want to share. Our signature black branding, the warm golden croffle, the creamy swirl of vanilla soft serve and the glossy ribbons of chocolate sauce come together to create a dessert that's as beautiful as it is delicious.

Watching customers photograph their dessert tells me we've created more than something to eat.

We've created a moment.

There is another part of Secret Basement that means even more to me.

From the very beginning, I wanted every customer who walked through our doors to experience something they couldn't find anywhere else.

We don't simply hand over a dessert across the counter.

We create it in front of you.

Every croffle is pressed fresh to order.

Every scoop of gelato is carefully selected.

Every swirl of soft serve is piped by hand.

Every drizzle of chocolate sauce.

Every final dusting of icing sugar.

Everything is finished while our guests watch.

It's our version of a chef's table.

In fine dining, guests watch chefs transform ingredients into something memorable. At Secret Basement, we wanted to bring that same feeling into the world of desserts. Instead of simply receiving a finished product, our customers become part of the experience. They hear the sizzle of the croffle, watch the soft serve being swirled, see the chocolate sauce being drizzled and witness the final touches before the dessert is placed into their hands.

I believe that's something truly unique in Singapore.

A chef's table experience dedicated entirely to desserts.

In just a few months, Secret Basement Gelato has grown from handcrafted gelato to our own in-house soft serve, introduced our signature croffles, and soon we'll be launching our waffles as well.

Every product represents countless hours of testing, tasting, learning and refining.

My goal has never been to create the biggest dessert menu.

My goal has always been to create desserts that people remember.

When someone takes that first bite, I want them to pause.

I want them to smile.

I want them to feel that they've discovered something special.

Every dessert that leaves the Secret Basement kitchen carries a piece of my obsession with getting things right. It carries the belief that food should do more than satisfy hunger.

It should create happiness.

It should spark conversation.

It should bring people together.

Most importantly, it should touch the heart of the person enjoying it.

If someone leaves Secret Basement smiling, with a memorable dessert in their hands, a photo on their phone and a story they'll tell their friends, then we've achieved exactly what we set out to do.

Because at Secret Basement Gelato, we're not just serving desserts.

We're creating experiences, one plate at a time.

A Special Thank You

Every dessert has a first customer, and for our croffles, that person was Shing Foo.

The day we finally perfected our croffles, I couldn't wait to share the news. I sent Shing a photograph with a simple message.

"We've created this. Would you like to come and try it?"

I wasn't going to be at the shop until around 8:00 p.m.

When I arrived, there he was.

He had already come to Secret Basement Gelato and patiently waited because he wanted to be one of the very first people to experience our newest creation.

It was an absolute pleasure preparing that very first croffle for him and watching him enjoy something that had started as nothing more than an idea in my head months before.
